White Chicken Chili

2 quarts chicken broth (64 oz)
2 to 3 tablespoons cornstarch
2 teaspoons cumin
2 teaspoons red pepper flakes
1 tablespoon chili powder
1 small can chopped green chilies
1 medium onion, chopped
2 to 3 boneless, skinless chicken breasts, cooked and shredded

Put broth and cornstarch in large pot; stir until lumps are gone.
Add beans, cumin, red pepper, chili powder, green chilies, and onion.
Cook for 20 minutes.
Add chicken and cook 10 minutes longer.
Salt and pepper to taste.

I did a nice potato soup with like 3 lbs of caramelized onions. Was very nice while watching the snow whip by my windows.

-35C here yesterday and it’s supposed to be above 0 for Christmas. Funky.

My pals on the West Coast have freezing rain though so it could always be worse.
