Desert Knights or Silver Knights sound ok.
Still won't be better than a plain "Knights" team (a.k.a London Knights) but they weren't able to get the rights for that.
Imma say Desert Knights for this one as it's the only one that doesn't sound like a cheap retirement home or motel.

They should have picked the state animal or bird (bighorn ram or bluebird). The latter with a really well chosen logo would be better than any knights variation.
