I'm from Montreal, Poutine (french fries, curd cheese and gravy) is a local dish and where are several variations of it I mean you can put anything on it (I once added sausages, onions, beef, chicken and smoked meat on one. Best Poutine Ever in my mind.

This is pretty true. Best poutine ive ever had (at poutine fest in ottawa) was made with bacon, pulled pork and ground sausage on top of the regular fries cheese gravy combo.
