I think an instant win should be a goalie goal. We may see some teams taking more risks, especially during late period face-offs in the offensive zone.
A new rule in hockey could be that is your team passes amongst all 5 skaters on the ice consecutively, and then passes it to the goalie and the goalie shoots it down the ice and scores on the other goalie, then it's an auto-game winner. It is honestly hard, but not impossible, with the losing team have nothing to lose at that point.

The new rule is that if you shoot the puck and score in a mail slot esque hole above your own net, then you'd automatically win. This increases the risk of teams taking shots high but also gives some incentive for teams being heavily down to take some hail marys at their own net.
