Recipe Time. Sadly no pictures today as I have been still eating up my meal prep from the last time.

Today our recipe is from my college days but I still enjoy it from time to time.

Today I bring you Hangover Pancakes

Ingredients

Wet
1/2 cup of Buttershots Schnapps
1 cup of water
1/2 cup  of milk/buttermilk
3 tablespoons of melted butter
1/2 teaspoon vanilla extract
1 egg

Dry
1 3/4 cups of all-purpose flour
1 teaspoon of baking powder
1/2 teaspoon of baking soda
1/2 teaspoon of salt
2 tablespoons of sugar
1/2 teaspoon of cinnamon


Other
Maple Syrup

Optional
Toppings(I usually go with strawberries or blackberries)
Nonstick spray


What you need:

Large Measuring Cup
Large Bowl
Ladle/Large Spoon for batter
Whisk/Fork for mixing (I suggest whisk for your own sanity)
Stove/induction surface
Griddle Pan/Fry Pan/Electric Griddle(With Electric you don't need a stove)
Turner/Spatula
Plate for storing pancakes and serving



Directions:

1. Start warming your griddle/pan on med-high heat.

2. In your large bowl combine Dry Ingredients and mix with your whisk. Mix well until ingredients are well incorporated.

3. Combine your Wet ingredients in your large measuring cup. Pour these into the bowl with your dry ingredients and mix well with your whisk.

4. One your griddle/pan is hot you are ready to cook. If you are going to use non stick spray coat the pan now.

Using your ladle/spoon, pour a small circle of batter onto the hot pan. I usually go for roughly 12-14 inch diameter circles. Allow the batter to cook until small bubbles begin to form in the batter and pop.

Using your Turner/Spatula, flip the pancakes and cook on the other side an equal amount of time. You want to get a nice golden brown color on each side. Don't worry about the first pancake, it's always a mess.

5. Remove pancake from the griddle/pan and onto a plate(I suggest keeping the plate in the oven on warm to keep the pancakes warm). Repeat step 4 until you use up all of the batter. I usually get 5-6 pancakes from this recipe but it all depends on how big you make them.

6. Stack pancakes on a plate to serve and cover in maple syrup and any additional toppings.


I hope you enjoy these slightly boozy pancakes that have been one of my 2 hangover breakfasts I make for friends. Maybe another time I will share the one that's much worse for you.
